My sophomore year in college my roommate, Ashlie, decided to make me and our other roommate, Kiara, a dinner she always had at home. So what was on the menu for that night, a chicken and rice casserole. This was my first time trying it the way she made it because my dad basically cooked it an entirely different way.
I decided to try it myself and let me tell you making this recipe was quick simple and the best recipe to make when you do not have the time nor patience to make a fancy dinner. So them nights when you either have class, work, or even taking the kids to their after school activities, here is your dinner savior.
What I used
Instant rice (2 cups)
Water (2 cups)
Chicken (I used grilled chicken strips made for ‘salads’
but you can use the can or chicken tenderloins) (about 2 cups)
Butter (about 4 tablespoons)
Salt, pepper, seasoning salt
Cream of celery
Cream of mushroom
Cream of chicken
Preheat the oven to around 400 degrees.
I like to heat up the chicken because well I am nervous that chicken won’t cook in the oven properly (even though it will). The brand I use is Kirkwood from Aldi’s, so all I needed to do was cook it in the microwave for about 3 minutes. Afterward, cut the strips or whichever chicken you end up using into small cubes. After this, I like to season the chicken with seasoning salt and stir it to coat every cube. Now comes the easier part.
In a baking dish, spray with the non-sticking spray around the entire dish. Now you will combine everything. Pour in the cream of celery, cream of mushroom, and cream of chicken. Add the 2 cups of instant rice (not cooked), the chicken and add the salt and pepper to the top of the recipe for taste. Stir all the content and add the 2 cups of water. Now you stir everything together and when you are done add the butter to the top, cut them into blocks. Put the dish into your preheated oven.
Let cook for about an hour and forty-five minutes and halfway through take it out the oven and stir the content. Once there is no more water and your rice and chicken are fully cooked your meal is done.
You can pair this with bread and I also love to pair it with green beans. And voila you now have a quick and affordable meal. If you need to buy everything, this meal should cost around 10 dollars. Good luck!
